Tasting notes: Intense ruby red colour tending towards blue, it has a full and fragrant bouquet with a very intense herbaceous aroma. Its taste is dry, bodied, tannic and sapid.
Vinification: Immediately after harvest, the grapes are destemmed and racked to stainless steel vats.
Manual pumping over is performed three times a day with a complete mixing of the pomace.
Fermentation temperature was not subject to control, but it was nevertheless maintained approximately at 28°C.
This is the best temperature for the extraction of colouring substances and tannins.
After 10 days, racking and pressing are performed, to be followed by refinement in stainless steel vats.
Food pairing suggestions: Typically paired with broiled or grilled red meat. It is also excellent with game birds or aged cheese. As for the Friulian cuisine, it is often paired with pan fried salami with onions and vinegar, jugged hare, dried sausages, and wild boar stew.
